I hope you are all well and looking forward to Spring which is fast approaching.

I have a big announcement to make...

I have written another book! The second book in the series to The Faery Tales. It's called The Faery Tales - The Crowning of Queen Bee. I hope you can all check it out. My name is Lucy Ela and I love to write!

I will write pretty much anything. As long as it captures imagination or is something that fills the mind with wonder and intrigue. Catching the readers eye!

 I am a freelance writer specialising in poetry, copywriting, jingles and inspiring phrases and quotes. And you probably already know that I'm also an author and write children's books.

My children's books are also full of beautifully classic style illustrations. 

I believe that inspiring imagination is a brilliant thing. Letting children's minds grow through reading is special. It encourages creativity which brings skill, imagination and confidence to children.

I have been writing stories for many years. It was just a little hobby. But I wanted to share them ....  eventually I did!

Recently I've had a lot of questions from followers on my social media pages about the food pictures I've been posting. I thought I'd  put some pictures I've taken of them here and give a quick bit of schpiel on how to create these tasty recipes . Now I am no chef and I'm not a nutritionist, this is literally just food that I love and have put together following my basic knowledge of food nutrition and what makes me feel good.

So I welcome you all to take a look. Just a bit of foodspiration for your thoughts!

This is a very regular breakfast for me. Mainly because it just tastes so good! It's fat free natural yogurt topped with blueberries, dried goji berries, sunflower seeds, pumpkin seeds and golden and brown linseed's. I then put two teaspoons of honey on top for a natural sweetener.

Just a quick goji berry fact for you - Did you know that they are an excellent source of antioxidants, help boost energy levels, is great for blood sugar control, may also help you lose weight and my favourite fact is it is also said to have anti- ageing benefits! Honestly you have to try it!

Pumpkin soup is my seasonal favourite!

I chop up a whole medium size pumpkin and then put it all into the blender along with a whole chopped onion and 3 garlic cloves. Put a quarter of water into the blender each time,  or in my case a Nutri Bullet, so that it becomes a smoother texture and easier to blend. Because there are a lot of ingredients I blend this all up a few times. Then place into a huge soup pan with a quarter of 300 ml tub of single fresh cream and two vegetable stock cubes. Add in some salt and grind some peppercorns into the mix while stirring. I then leave this to cook for 45 minutes on a low heat. 

When dishing up, add a small drop of the single cream into the bowl before serving and stir in. 

This is my favourite soup to make. Warming and mouth wateringly delicious!

This is my salmon, spinach and asparagus linguine... and it's delicious!

To make this oven bake your salmon with a tiny bit of olive oil. Make your linguine and pan fry your spinach, asparagus and two cloves of garlic for roughly about 3 minutes. Once the pasta and the salmon are ready, drain the pasta and add the spinach, asparagus and garlic into the pasta with a bit of olive oil and mix in on a low heat for 3 minutes. Once ready, break up your salmon on the top and mix in on the plate. I added some coriander into the mix for a bit of extra flavour too. This is a super scrumptious pasta dish!

My mango and feta salad may sound a bit strange and it is... in the way that it strangely goes really well together! With some mixed salad leaves, chopped onion, half a chopped up avocado and a roasted pea and seed mix. The roasted pea and seed mix is sold in most large  supermarkets. Just add a bit of olive oil and lemon juice.... et voila!

Presenting Lucy's Homemade Burgers.

I really enjoyed making these over the summer and throwing them on the BBQ. However they're also great in the oven.

To make  them I begin with using  10% fat organic beef mince meat. I knead it in a bowl for about 10 minutes adding in salt and pepper, two cloves of crushed and diced up garlic and dried chilli flakes with olive oil which makes the mixture easier to stick together and knead, I add a sprinkling of rosemary but not too much as you don't want to overpower the flavour with this highly flavoursome herb. I also then added in some chopped up coriander... again not too much. I then mould the meaty mix into a burger shape and place on a well olive oiled tray to carry outside to the BBQ or place into the oven. Obviously cooking time on this depends on how well done you like your burger,

They are seriously juicy and full of flavour. Give it a try.

Crayfish, feta and falafel salad is a great energy booster! Crayfish tails, feta cheese, onion and beetroot are placed on a bed of crunchy kale. I'd love to say I made the falafel's but I didn't have the time. Squeeze some lemon on it and drizzle some olive oil and there you go! 

I whipped this up last week and it was a delight.

I don't know what to name it but it's basically boiled chickpeas, spinach and quinoa with pan fried king prawns in garlic and then simply a runny poached egg on the top. You can sprinkle some pepper on too if you fancy. I love hollandaise  sauce so I poured some over and it really added to the flavour.

Poached egg and smashed avocado on sour dough is always a great breakfast/ brunch or lunch! I've put my own Cypriot spin on this by adding grilled halloumi cheese, grilled tomato with olive oil, salt and pepper, add a couple of drops of tobasco for a small kick, and finally to give you a real Cypriot taste grilled olives with some orange zest on. It's lush.

This is a super quick and easy salad to whip up if you're in a rush.

Salmon, avocado and some roasted seeds and peas sprinkled on the top of a bed of rocket. You can see from this a love squeezing lemon on my salads! Remember folks lemons are super good for you. They are hydrating, good for your digestion, is a great source of vitamin c and supports weight loss.

This is the same as my salmon and avocado above. However I just thought it would also be nice to add a hard made poached egg. The reason I didn't want it runny was because I didn't want it to overpower the tastes of the avocado and salmon and take away any of the crunchiness of the seeds.  It's such an easy and fast salad to make at lunch. Muy delicioso! As they say in Spanish.

Aubergine and prosciutto ham salad's always go down a treat. Just fry up some aubergine with a clove of garlic. Place on a bed of fresh, uncooked kale and then add the prosciutto ham and tomato's. I also am a beetroot fan so I added this for extra goodness! Squeeze a slice of lemon and pop a tiny bit of olive oil on.... honestly this has got me hungry whilst typing this!
